Feed the fridge with leftovers for quick dinners

If you are looking for meals that are quick, just use your leftovers and try to think outside the box! Here’s some ‘food’ for thought!!

Quiche – use any meat and veg leftovers. Dice it all up, put it into a pie plate or in a pie shell, add some beaten eggs, and cook it up. You can either eat it right away or freeze it, then pull it out for a quick, easy to reheat dinner.

Breakfast hash – use any leftover french fries diced up as hashbrowns. Add in leftover veggies and meat, then fry it in a pan. Add some eggs for an easy cowboy breakfast hash. (This is also way quicker to cook up/heat up than the quiche!)

Use up little bits of cheese in a fancy mac and cheese – if you have any fancy cheeses leftover from a party, use up all the little bits in a fancy cheese sauce for mac and cheese! Or, if you have enough cheese, make it a cheese fondue!

Nachos – Use up literally any leftovers and throw it on a bed of nacho chips for a super quick meal. Top it with some cheese (or even all that fancy cheese) and bake it or broil it for a few minutes. You can dice up some leftover steak, chicken, cheeseburgers, bacon, and even fish filets! You can also use up leftover pulled pork or even some of the leftover breakfast hash!!

Create a stir-fry – To make a delicious stir fry, all you really need is meat and veg, some kind of sauce, then serve it over some kind of carb like rice, quinoa or couscous. Get creative with your stir fry meal and come up with a variety of combinations with your leftovers. One of the favourites in our house is using leftover sausage; slice it up and add it to some fresh or leftover veggies. Adding a sauce can be the difference between the taste of the dinner on Monday vs. dinner on Tuesday!

Fried rice – If you have leftover rice and some meat, turn it into an easy fried rice meal. Toss in some frozen or leftover veggies. Top it off with some fried rice sauce and boom!

Sheet pan dinner – If you have veggies that are on the cusp of going bad, roast the veggies in the oven to give them great flavour. Add a bit of leftover meat, and you have yourself a dinner!

Soup – toss a mix of your leftovers, diced, into a pot of hot stock. Make it a leftover soup version of your dinner.

Crispy chicken wrap – if you have some leftover chicken nuggets or any chicken for that matter, use it in a wrap. Add some lettuce or coleslaw and some cut-up veg. Drizzle it with some salad dressing for a fresh and delicious wrap.

New spaghetti – if you have leftover cooked burgers from a party and some extra hamburger buns, break up the burgers and add some tomato sauce for an easy spaghetti sauce. You can use the buns for some garlic bread on the side!

Re-purposing your leftovers can be a very satisfying and often quick way to add variety into your meal planning.
